Snow Days

WordPress challenged bloggers to write more in 2011. In order to give myself a fighting chance, I joined the blog-a-week challenge instead of the blog-a-day challenge. Every day there’s a new blog topic idea on the Daily Post. In light of the weather forecast for the next 48 hours, today’s idea on the Daily Post seemed like a good blog topic.

What do you do when you’re snowed in? Do you make a grocery store run if there’s snow in the forecast? Are you one of those like me who has to go to work regardless of the weather?

If it’s cold and snowy out, I like to curl up with a good book or a movie. I love to have something hearty to eat, like chili or beef stew. Unless the cupboards are absolutely bare, I don’t make a snow grocery run.

So chime in-what do you do on those blustery, snowy, wintery days?

  1. Cheeseburger soup
     
    Brown 1 pound hamburger with ¾ cup chopped onion (frozen seasoning mix)
    Add chopped green chiles or chopped jalapenos to taste (about ¼-1/3 cup if hot)
    Add basil or cilantro if desired
    Add 1 can Rotel tomatoes and green chiles (house brand)
    Add 2 Rotel cans of water.
    Add two tsp beef base and 1 beef cube (or 3 beef cubes)
    *Dice or slice 1 large baking potato and add to pan.
    Cook 10 minutes or until potatoes are tender
    Add 1 lb Velveeta cheese cut in small cubes, stirring in after half is added and again at end until cheese is melted.
    Adjust “soupiness” with added water or milk.
    Serve with sour cream and/or grated cheddar if desired.
    Can be garnished with sliced lettuce and diced tomatoes.
     
    *Can add whole kernel corn (about ½ can, drained kernels) but add only 1 can of water until cooked and cheese is melted then adjust.

  2. Well, right now, I’m sitting in a very comfy recliner with my laptop where I can look outside and see the snow still coming down (it’s quite blustery, too, so it’s moving in interesting undulations). I can smell the green-chile cheeseburger soup Mom’s making.

    If I were at home, I probably would have made a run to the store late last week just to stock up on essentials—sweet and salty snacks, stuff for soup, wine, hot cocoa mix, and sweetened condensed milk for making snow-cream.

    • Mmmm…green-chile cheeseburger soup sounds awesome. Think your Mom would share the recipe? I haven’t had snow-cream in years-may have to resurrect that childhood treat.

      • I usually eat it with tortilla chips, so, yes, Fritos would probably be great with it! It’s one of those soups that you can really experiment with. Adding Taco seasoning to it instead of (or in addition to) Rotel would probably be good, too.
